Asian style grilled King oyster

King oysters are such a versatile variety. Also, they have great shelf life. Here’s a quick, easy recipe that will go great with your stir fry but will also be a great addition to your summer bbq cook-out!

Ingredients

  • 250g king oyster mushrooms, sliced lengthwise into ½ - 1 cm thick pieces

  • Oil with a high smoke point (e.g., peanut oil)

For the glaze

  • 2 tbsp water

  • 1 tbsp oyster sauce

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • ½ tbsp sugar (or 1 tbsp palm sugar)

  • 1 clove garlic, minced

Instructions

  1. Mix all the glaze ingredients in a small bowl and stir well until the sugar is completely dissolved.

  2. Heat a grill pan over high heat (or fire up the BBQ).

  3. Lightly brush the mushroom slices with oil and grill them for 2 minutes on each side, until they have nice grill marks.

  4. Brush the grilled mushrooms with the glaze and let them caramelize briefly on the grill.

  5. Serve immediately and enjoy!
